Crispy Air Fryer Parmesan Zucchini Fries

Ingredients:
2 medium zucchini
1 large egg, beaten
1/2 cup all purpose flour
1 cup Kookakrumb Panko Breadcrumbs
1/2 cup parmesan cheese, grated
3/4 teaspoon garlic salt
salt and pepper to taste
Method
Preheat Air Fryer to 200C
Cut zucchini into thirds then chop each third in half length ways and then into match sticks.
Prepare the ingredients for crumbing the zucchini match sticks by putting the all purpose flour in one shallow bowl, the egg in another, and then mix the panko, parmesan cheese, garlic salt, salt and pepper together in an additional shallow bowl.
Coat the zucchini matchsticks first in flour, then in the egg (shaking off excess), finally in the panko mix, do this one at a time. Place on a plate after and repeat until all pieces of zucchini are coated.
Place zucchini matchsticks in a single layer inside the air fryer basket. Cook for 7-10 minutes until golden brown. You wont need to flip them. Depending on the size of the air fryer you may need to cook them in batches to ensure they are all cooked through.
Serve hot and enjoy with tomato sauce, ranch, aioli, or your favourite dipping sauce.
